  • 2 cups of cassava flour
  • 1 teaspoon of salt
  • 3/4 cup of warm water
  • 1/4 cup of olive oil


  1. In a large mixing bowl, whisk together the cassava flour and salt.
  2. In a separate bowl, mix together the warm water and olive oil.
  3. Gradually add the wet ingredients to the dry ingredients, stirring continuously until the dough comes together.
  4. Knead the dough on a floured surface for about 5-10 minutes, until it becomes smooth and elastic.
  5. Place the dough in a clean bowl, cover it with a damp towel, and let it rest for at least 30 minutes.
  6. After the resting period, divide the dough into equal portions and shape them into balls.
  7. Roll out each ball of dough on a floured surface until it is about 1/8 inch thick.
  8. Heat a skillet or griddle over medium-high heat. Place the rolled-out dough on the skillet and cook for about 1-2 minutes on each side, or until it becomes golden brown and puffy.
  9. Remove the cooked tortilla from the skillet and repeat with the remaining dough balls.
