  • 2 cups arrowroot flour
  • 1/2 cup coconut oil, softened
  • 1/2 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt


  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the arrowroot flour, baking powder, and salt.
  3. In a separate bowl, cream together the softened coconut oil, maple syrup or honey, and vanilla extract until light and fluffy.
  4. Gradually add the dry ingredients to the wet ingredients, stirring just until everything is combined. Do not overmix.
  5. Roll the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet.
  6. Flatten each ball with a fork, making a crisscross pattern on the top.
  7. Bake for 12-15 minutes, or until the edges of the cookies are lightly golden brown.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
