Spelt Flour Muffins-Scones

Here is a recipe for Spelt Flour Muffins/Scones:


  • 2 cups spelt flour
  • 1/2 cup cane sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup coconut oil or butter, melted
  • 1 cup unsweetened almond milk or other milk of your choice
  • 1 teaspoon vanilla extract
  • 1 egg (or a flax egg for vegan option)


    1. Preheat your oven to 375°F (190°C) and prepare a muffin tin or scone pan with liners or non-stick spray.
    2. In a large mixing bowl, whisk together the spelt flour, cane sugar, baking powder, baking soda, and salt.
    3. In a separate bowl, mix together the melted coconut oil or butter, almond milk, vanilla extract, and egg.
    4. Gradually add the wet ingredients to the dry ingredients, stirring just until everything is combined. Do not overmix.
    5. Spoon the batter into the muffin cups or scone pan, filling each one about 3/4 of the way full.
    6. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin or scone comes out clean.
    7. Allow the muffins or scones to cool for a few minutes in the pan before transferring them to a wire rack to cool completely.
